WHERE IT STARTED
This is where our story begins. In June of 2016, we opened our first ramen shop in the popular Church Street Marketplace in Burlington, Vermont. We were an instant hit with the students and neighbors and just kept doing what we do. Making authentic Japanese Ramen with fresh ingredients at an affordable price. We’re excited to continue growing and expanding our business. We hope to bring the joy of Gaku Ramen to even more people in the years to come. Thank you for being part of our story!

authentic ramen:
Gaku Ramen is committed to offer authentic, Japanese ramen. Our recipes were specifically developed by two deeply experienced Japanese ramen masters who personally came to Burlington from Japan to fine tune our menu and train the local chefs and staff. There are actually a number or basic types of ramen, and we offer three of them here.Please try all three and discover what flavor you like most!
tonkatsu ramen
Tonkotsu is a pork-based broth, and in some ways is our most flavorful ramen. Tonkotsu Ramen is generally accepted to have started in western Japan, and has been immensely popular in the United States. At Gaku, we use fresh pork that is cooked at varying temperatures for hours to bring out the flavor.It is thicker and richer than a soy sauce based broth, as the pork adds texture as well as flavor to our ramen. It is pronounced “Tone Koh Tsu” and should not be confused with “Tonkatsu,” which is a fried breaded pork cutlet popular in Japan.
Miso Ramen
Miso Ramen is also one of the most popular styles of ramen in Japan. Miso itself is made from soybeans and is high in protein and vitamins. Miso is a staple of Japanese food. Most people have heard of Miso Soup, which is served with many Japanese cuisines. Miso Ramen hails from northern Japan, and gained popularity throughout the 1960s to the point where, today, it is considered a basic Japanese ramen. The Miso used in ramen is often a touch spicy. At Gaku, we use real Miso in a special recipe that brings out some of the spicy notes without being overpowering.
shoyu ramen
“Shoyu” is Japanese for soy sauce, and is one of the most basic, but delicious ramen varieties around. Shoyu Ramen is thought to have started in the Kanto area of central Japan, especially centered in Yokohama and Tokyo. Shoyu Ramen is a little lighter than the other broths we serve, and perhaps some would say it has a “cleaner” taste. Our vegetarian ramen is also made using a Shoyu base.
