Our second restaurant, with a full bar and outdoor seating, located in the heart of the Pearl St Marketplace, opened in April 2019 in Boulder.

Fort Collins, Colorado

Our third store is located at 223 Linden Street in the heart of “Old Town” Ft Collins. Open 7 days a week.

Gaku Ramen was conceived of by three friends who wanted to combine their passion for ramen with their love of friendly college towns.

Executive chef Colin Arthur serves authentic Japanese ramen, rice bowls, and starters, while the restaurant features a full-service bar with local craft beer, wine, signature cocktails, sake, shochu, and Japanese whiskies. Arthur opened Gaku Ramen’s first location in Vermont in 2016 as the sous chef.

Kick off your meal with the pork buns , in which pickled vegetables brighten the spicy sambal mayo and rich meat tucked inside. You’re probably visiting Gaku for the ramen, though, and the tonkotsu, with its buttery, porky broth and gobs of noodles, bamboo shoots, and kikurage mushrooms, is the way to go. Opt for the black garlic and poached egg add-ons for a smokier, creamier bowl.

“Gaku Ramen, a Japanese-style ramen restaurant in Burlington, Vermont, will open its second location in Boulder later this month. The new Gaku Ramen will be in the University Hill neighborhood at 1119 13th St. The restaurant, led by executive chef Colin Arthur, will feature a full bar.”

Gaku Ramen is a newcomer to Church Street, and it’s sure to become a staple for UVM students because of their excellent food and location. They’re open from 11am-10pm from Sunday-Wednesday, and 11am-Late Thursday-Saturday. They use locally grown ingredients whenever possible, and if it’s not local, it’s still sustainably sourced!

Chef Arthur clearly knows that the focus of any good ramen should rest with the broth. A dedicated menu page explains the fundamentals of each base, and Arthur executes the craft with great rigor. The tonkotsu ($13) comes with pork broth, pork chashu, kikurage mushrooms and bamboo scallions.

As I pulled endless noodle ribbons from the bowl, the broth was so dense and rich in garlic-laden, porky essence that it seemed to wobble rather than a splash — a hallmark of any good bone broth. With each bite, chile spice grew from a tickle to sinus-clearing satisfaction. I cooled it with sips of crisp, pale lager.
